I also just recently finished Forbidden West a couple of months ago! Just prior to that I had finished Silksong, and just afterwards I returned to Baldur’s Gate 3 and finally finished that!
I’m now playing Expedition 33 and Fez.
The Elder Scrolls III Morrowind. Game of the Year Edition, obviously.
I second the recommendation for the Ghost of Tsushima and Yoitei games.
If you have PSVR and don’t mind a poor $/playtime value, the Horizon VR game is extremely short but very pretty. It’s mostly a climbing simulator and has no replayability, but there are a couple of moments early on where the VR absolutely shined. I even had an “oh shit, this is mindblowing” moment at one specific point.
Try Enslaved Odyssey to the West, it’s “old” at this point but it’s kinda the same.
I’m glad you finished it. Means Ted Faro died again.

And while the storyline not it’s strongest point, I do believe it works in an open world sandbox.Do you want similar games? Something old? Something new? Something borrowed? Something blue?
If you’re looking for more gather resources, craft upgrades, stealth around, climb shit games, theres the Tomb Raider reboots, or BOTW/TOTK.
Cyberpunk 2077 has the all the free roaming outfit hoarding mayhem your heart desires.
Gothic 1 Remake is hot off the presses if you’re looking for more fantasy dino fights.
If you enjoyed the reflex action combat, Expedition 33 has that in spades (but is turn-based)
There’s no shortage of good options out there.
I found the Ghost games similar. Then moved to cyberpunk 2077 but that’s more like fallout. Red dead 2 might also work.
