the iPhone has all of that built-in, except actual aperture settings which i’ll grant you. it’s also much cheaper to buy an app once than a digital camera

Probably because upvoters know that iPhone actually can’t do long exposures (it fakes them by adding blur) and it’s time lapse photography is very limited (need a paid app for that, the default one limits the video to 40 seconds no matter how long you film), which in addition to being being unable to modify aperature settings directly (as you mention) is pretty much everything OP was asking for…
