They still do; at least on the iPhone 12, there are three buttons: power, volume up, and volume down. Bonus: there is also a toggle switch for silent mode.
That toggle switch for silent mode can be configured for other button presses too, it defaults to the silence thing but can be used for other stuff.
I kinda miss the physical toggle one from back in the day, had a satisfying click.
