The freshwater drum, Aplodinotus grunniens, is a fish endemic to North and Central America. It is the only species in the genus Aplodinotus, and is a member of the family Sciaenidae
Depends on where you are in the world. In Australia it’s common to use what we call “flake” (gummy shark). It’s boneless, very mild in taste, and holds together well (doesn’t fall apart while eating it)
